Fried
Anchovies
|
|
500g big
anchovies, 2 eggs, 200g flour, 3 decilitres
extra virgin olive oil, salt and ground pepper. |

Fillet
anchovies without breaking them; coat them with
flour first and then with beaten eggs and a
pinch of salt. Fry both sides in well hot oil.
Add salt and pepper and serve right away (serve
onto a layer of fried seaweeds). Another typical
recipe is "Anchovies with oregano"; in this case
line them in a pan, add oil, slices of garlic,
chunked parsley, oregano and vinegar. Cover and
cook. |
