Mozzarella

buffalo mozzarella (dry) or fior di latte cheese
of aprox. 400g, stale bread (from the day before),
2-3 eggs, 30g parmesan cheese, flour, extra
virgin olive oil to fry, salt and pepper. |

Cut
mozzarella (or fior di latte) into four slices.
Halve slices. Remove crust from bread and cut it
in the same shape of cheese. Blend eggs with a
pinch of salt, pepper and parmesan cheese.
Separately, coat bread and cheese with flour and
beaten eggs. Put mozzarella onto bread and
stick, sprinkle with a handful of breadcrumbs
and fry in well hot oil. Serve two pieces per
person. |
