Ciliegia della valle dell'Irno
(Cherry
of the Voile of Irno)
Bracigliano and Siano, together with a small
group of other communes in the Voile dell’Irno
(the piedmont area in the province of Salerno to
the north of the main town) still base
part of their economy on cherry farming.
Local cherry farming combines the production of
fruit with naturalistic value and a beautiful
landscape, as well as hydrogeological protection,
and has always focused on the typical character
of the produce and preservation of the original
genetic heritage. |

Among the main autochthonous cultivars are the
Sciazza and Spernocchie (I and II), which are
grown almost exclusively within this limited
production area and characterised by high
productivity and a particularly marketable fruit.
The blossoming period is at the end of March and
beginning of April, whereas the fruit ripens
medium-early, in the second half of May for the
Sciazza variety and a few weeks later for the
Spernocchie variety. The fruit is medium-sized,
dark red and shiny with a very firm, compact and
crisp flesh, a pleasant bitter-sweet taste and
resists well to handling. This latter
characteristic makes it ideal for refrigeration,
processing and sale in areas far from the
production area. Another typical variety in this
area is the Pagliaccio, which is distinguished
by its excellent organoleptic character.
The trees are mostly cultivated in the
traditional vase-shaped way. The cherries are
picked by hand, using ladders, are put into
crates with holes, in batches of about 25 kg,
and transported to processing centres or sales
outlets, mainly on the regional market.
